Grilled Bombay Sandwich

Happy day 3 of daylight savings...anyone else still not used to it, ok great glad I'm not the only one. Anywho, I mentioned in yesterday's post that I made a popular Indian street sandwich and it was the easiest and yummiest thing ever. I'm not a super big fan of Indian foods (growing up eating it has made me kind of blah about it), but there are some things that just remind me of visiting family in India and the amazing lifestyle they enjoy there. Everything is so much more laidback there and not go, go, go like it is here. Along with the city evolving, the food has evolved and gotten yummier. I've had this sandwich at restaurants and since I was craving it over the weekend, I decided I could just whip it up at home.  So if you want to try something new and delicious, check this out!
 
Grilled Bombay Sandwich
 
 
 
 
Ingredients:
 
-3 big slices triangular bread
-butter
-green chutney (found in ethnic aisle of grocery stores)
-1 small cucumber (peeled & sliced)
-sandwich masala (spices, also found in ethnic aisle)
-1 medium potato (peeled, boiled, & sliced)
-1 1/2 medium tomatoes (cut into thin slices)
-1/2 medium onion (peeled & cut into thin slices)
 
 
 
Directions:
 
1. Cut the edges off one of the slices of bread.
2. Spread the butter and then the green chutney evenly on all 3 slices of bread.
3. On one slice of bread, arrange the cucumber slices and sprinkle the sandwich masala evenly.
4. Then arrange the potato slices on top and sprinkle more sandwich masala.
5. Place onion slices accordingly and evenly sprinkle more sandwich masala.
6. Place the slice of bread with the edges cut off, butter side facing down, on top of onion slices.
7. Arrange tomato slices evenly and sprinkle a bit more sandwich masala.
8. Add the last slice of bread, butter side facing down, and press lightly.
9. Place on sandwich grill (I used my George Forman grill) and cook until golden brown and crispy on both sides.
10. Slice in 4 triangles and serve immediately!
 
 
This makes one plate, but if you want more just adjust ingredients for each additional plate. These are quite filling since they are double decker sandwiches and usually 1 plate=1 person. They are a bit on the spicier side so if you want to avoid too much spice, lessen the green chutney and sandwich masala.   2. I LOVE Indian foods and spices! I know I will enjoy this sandwich. Now to just find the correct ingredients. The green chutney sounds good., I use a brown mango chutney to cook West Indian foods and curries.
