Fall is an awesome time for pumpkin everything. I am such a basic with my love for pumpkin. Pumpkin spice, pumpkin pie, pumpkin cookies...the list goes on. My absolute favorite recipe for the fall has got to be my Pumpkin Cheesecake Pie. I try to make this every year around Thanksgiving and it's always a big hit. Here is my recipe for this, so if you try it out I would love for you to let me know if the comments on how it turned out!
{Yield: 2 9 inch pies}
Ingredients:
2 (8 oz) packages cream cheese
3/4 cup white sugar
1 (15 oz) can pumpkin puree
1 1/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
2 large eggs
1/4 tsp salt
2 prepared 9 inch graham cracker pie crust
Directions:
1. Preheat oven to 350 degrees F.
2. Beat together the cream cheese & sugar, add pumpkin puree and the spices. Beat in eggs one at a time. Add salt. Beat until creamy. Pour into two pie crusts.
3. Bake at 350 degrees F for 50 mins {or until knife inserted in the center comes out clean}. Let it cool then top with some whipped cream if desired.
